Pineapple Pecan Bars Recipe

Ingredients:
  • 2 cup plain flour
  • 2 cup brown sugar, packed
  • 1/2 cup margarine, softened
  • 1 cup pecans, chopped
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 3/4 cup sour cream
  • 1 teaspoon vanilla
  • 8 ounce crushed pineapple, drained

Directions:
Preheat oven to 350 degrees. In an electric mixer, beat together the flour, brown sugar, and margarine until crumbly. By hand, stir in the pecans. Prepare a 9- x 13-inch baking pan with Baker's Joy. Remove 2 cups of the crumbly mixture, and press in the bottom of the pan. To the remaining crumbly mixture in the bowl, add cinnamon, baking soda, and salt. Beat in the egg, sour cream, and vanilla until well blended. Stir in the drained pineapple mixture over the crumbly mixture. Bake in the preheated oven for 30 to 35 minutes until bars pull away from the sides. Allow to cool slightly before cutting into bars.
