Cowboy Cookies Recipe


Ingredients:
  • 2 cup plain flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup margarine
  • 1 cup light brown sugar, packed
  • 1 cup white granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1-1/2 cup granola cereal
  • 1-1/2 cup cornflakes
  • 1 cup uncooked quick oats
  • 1 cup flaked, canned coconut
  • 1 cup pecans, chopped

Directions:
Preheat oven to 325 degrees. In a large bowl, sift the flour, baking powder, salt, and baking soda. In an electric mixer, cream the margarine and both sugars. Add eggs, one at a time, and the vanilla. Gradually beat in the flour mixture until well blended. By hand, stir in both of the cereals, oats, coconut, and pecans. Prepare cookie sheets with spray-oil. Drop cookies by spoonfuls to 50 cent size. Bake in the preheated oven for 10 to 12 minutes. Makes about 90 to 100 cookies.
