Strawberry, Pecan, and Feta Salad
- 12 cup Romaine lettuce
- 1 cup crumbled feta cheese
- 2 cup sliced strawberries
- 1 1/2 cup Priester's pecan halves
- 1 each stick butter
- 2 cup brown sugar
In a large bowl combine romaine lettuce with strawberries, feta cheese and sugared pecans. Add balsamic vinegar dressing and toss. To make the sugared pecans, melt butter in saucepan or saute pan over low heat. As butter begins to soften add brown sugar, stirring constantly. When brown sugar begins to bubble on medium heat, continue stirring for two more minutes. Add pecans and stir until coated with sugar. Pour sugared walnuts onto waxed paper. Allow to cool completely. Break pecans apart before adding to salad.
