For those who enjoy filling the house with the smell of fresh-baked pie for Thanksgiving dinner, this simple recipe uses our world-famous pecans that you can purchase in halves or already chopped - whichever is your family's favorite! Melty, chewy, with a perfect bit of crunch, this pie is sure to be a crowd favorite for anyone with a sweet tooth and just enough room after dinner for a slice (or two!) of dessert.

Priester's Perfect Pecan Pie

Ingredients:

  • 3 eggs
  • 1/2 Cup granulated sugar
  • 1/2 Cup light brown sugar, packed
  • 1/2 Cup light corn syrup
  • 1/4 Cup margarine or butter, melted
  • 1 Teaspoon white vinegar
  • 1/4 Teaspoon salt
  • 1 Teaspoon vanilla
  • 1-1/3 Cup Priester's Pecans, chopped or halves
  • 1 folded commercial refrigerator pie crust, unbaked

Directions:

Preheat oven and a baking pan to 350 degrees. In a large bowl, lightly beat the eggs; then beat in both sugars, corn syrup, melted margarine, vinegar, salt, and vanilla until well blended. Pour the pecans in the unbaked pie crust; then pour the egg mixture over the pecans. Bake on the preheated baking pan in the preheated oven for 35 to 40 minutes. Filling should be slightly firm and the top browned.

Pumpkin Cheesecake with Caramelized Pecan Topping

Ingredients:

  • 1 Cup graham cracker crumbs
  • 1/4 Cup granulated sugar
  • 1/4 Cup butter, melted
  • 2 - 8 Ounce packages cream cheese, softened
  • 1/2 Cup granulated sugar
  • 1/2 Cup canned pumpkin
  • 1 Teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 2 each large eggs
  • 1/2 Teaspoon ground cinnamon
  • 1/8 Teaspoon ground nutmeg
  • 1/8 Teaspoon ground cloves
  • 3 Tablespoon butter, softened
  • 1/3 Cup light brown sugar, packed
  • 1/3 Cup chopped Priester's pecans

Directions:

Stir together the first three ingredients. Press crumb mixture into bottom and up sides of an 8-inch springform pan. Bake crust at 325 degrees for 8 minutes. Cool on a wire rack. Beat cream cheese and next 4 ingredients at medium speed with an electric mixer until smooth. Add eggs, 1 at a time, beating until blended after each addition. Stir in cinnamon, nutmeg, and cloves. Pour mixture into prepared crust. Bake at 325 degrees for 40 minutes or until almost set. Remove cheesecake from oven; gently run a knife around edge of pan, and release sides. Cool completely on a wire rack. Cover and chill 8 hours. Stir together 3 tablespoons butter, brown sugar, and pecans: spoon over top of cheesecake. Broil 3 inches from heat for 3 minutes or until mixture begins to bubble. Let stand 10 minutes before serving. Store in refrigerator.
