Diane's Fantastic Fresh Apple Squares Recipe

  • 2-1/2 cup plain flour
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1-1/2 cup vegetable oil
  • 2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup pecans, chopped
  • 3 cup peeled, shredded Granny Smith apples

Preheat oven to 350 degrees. Measure flour and sift; then re-measure flour by spooning lightly into cup. Re-sift flour with the baking powder, salt, and soda; set aside. In an electric mixer, combine the oil and sugar; then add the eggs, one at a time, beating after each addition. Beat in the vanilla; then slowly add the flour mixture, and beat for an additional 2 minutes. By hand, fold in the pecans and apples until mixed. Prepare a 9- x 13-inch baking dish with spray-oil; then pour in the batter. Bake in the preheated oven for 55 minutes or until cake tests done. After cake has cooled, cut in squares.
