Feta Spinach Salad with Pecans

  • 1 bunch tender, fresh spinach
  • 1 small avocado, peeled and thinly sliced
  • 1/2 medium red onion, sliced thin in rings
  • 4 ounce crumbled feta cheese
  • 1/2 cup coarsely chopped pecans
  • Dressing :
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon dried basil, crumbled
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon granulated sugar
  • 1 large clove garlic, minced and crushed

Wash spinach very carefully, and remove large stems; drain until completely dry. Tear spinach into bite-size pieces, and put into a large bowl. Make the dressing by blending all of the dressing ingredients in a food processor or blender. Add all remaining ingredients to the spinach, and pour on the desired amount of dressing. Toss several times to mix well before serving.
