Fresh From the Tree Pear Cake Recipe

  • 2-1/2 cup plain flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoon baking powder
  • 2 teaspoon ground cinnamon
  • 2 cup granulated sugar
  • 3 eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla
  • 3 cup peeled, finely diced, fresh pears
  • 1 cup pecans, chopped

Preheat oven to 350 degrees. Measure flour and sift; then re-measure flour by spooning lightly into cup. Re-sift flour with baking soda, salt, baking powder, and cinnamon. In an electric mixer, beat the sugar with the eggs; then slowly add the oil, and beat 1 minute. Gradually add the flour mixture to the egg mixture until well blended. Beat in the vanilla, and continue to beat on medium speed for 2 minutes. By hand, fold in the pears and pecans. Prepare a 9- x 13-inch baking pan with Baker's Joy. Pour batter in the pan, and bake in the preheated oven for 45 to 50 minutes or until cake tests done. Cool cake for 10 minutes; then turn out on a wire rack to cool completely. This allows the cake bottom to air properly. Cut in squares to serve.
