German Nut Cookies by Sara

  • 1 egg
  • 1 cup maragrine, melted
  • 1 cup granulated sugar
  • 1 teaspoon vanilla
  • 2 cup plain flour
  • 1 cup pecans, chopped

Preheat oven to 250 degrees. Separate the egg, and allow to come to room temperature. In an electric mixer, beat the margarine, sugar, vanilla, egg yolk, and flour. Spread very thin on an ungreased cookie sheet. In another electric mixer bowl, beat the room temperature egg white very stiff and dry. Spread the stiff egg white over the cookie mixture ( will be very thin,) and sprinkle with pecans. Bake in the preheated oven for 1 and 1/2 hours or until golden brown. Cut cookies in squares immediately.
