Nutty Apple Bread Recipe

  • 2 cup plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1/2 cup margarine, softened
  • 2/3 cup granulated sugar
  • 2 eggs
  • 1-1/2 cup peeled, cored, shredded Granny Smith apples
  • 1 cup pecans, chopped

Preheat the oven to 350 degrees. Measure flour, and sift; then re-measure flour by spooning lightly into cup. Re-sift flour with baking powder, baking soda, salt, and nutmeg; set aside. In an electric mixer, cream the margarine and sugar until light; add eggs, 1 at a time. Beat until mixture is light and fluffy. Slowly beat in the flour mixture, and beat for an additional 2 minutes. By hand, stir in the apples and pecans until blended. Prepare a loaf pan, and bake in the preheated oven for 50 to 60 minutes or until done. Allow to cool for 20 minutes; then turn out of pan on a cooling rack. Cool completely before slicing.
