Too Good Chocolaty Cupcakes Recipe

  • 4 squares unsweetened chocolate
  • 1 cup butter or margarine
  • 1/4 teaspoon butter flavoring
  • 1-1/2 cup pecans, chopped
  • 1-3/4 cup granulated sugar
  • 1 cup plain flour
  • 4 eggs, beaten
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt

Preheat oven to 350 degrees. In a small heavy saucepan, melt the chocolate and the butter. Add butter flavoring and the pecans; stir to coat. Remove saucepan from the heat. In a large bowl, combine the sugar, flour, eggs, vanilla, and salt until just barely mixed; do not beat. Gently stir the chocolate mixture in the sugar mixture without beating. Place foil-lined baking cups in 18 muffin tin cups, and evenly divide the batter in the cups. Bake in the preheated oven for 30 to 40 minutes or until cupcakes test done.
