Karen's Southern Creams

  • 5 cup plain flour
  • 1 teaspoon salt
  • 3 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup margarine
  • 2 cup granulated sugar
  • 3 eggs, well beaten
  • 1 teaspoon vanilla
  • 1 cup sour cream
  • 1-1/2 cup pecans, chopped

Preheat oven to 350 degrees. Measure flour, and sift with salt, baking powder, and baking soda. In an electric mixer, cream margarine and sugar. Beat in eggs, vanilla, and sour cream. Gradually beat in flour mixture until well blended. By hand, stir in pecans. Prepare cookie sheets with spray-oil, and drop by spoonfuls to 50-cent size. In a small bowl, mix topping ingredients: 3 tablespoons granulated sugar and 1 teaspoon cinnamon. Grease bottom of a small, thick glass. Dip bottom of glass in topping mixture; then very carefully press cookies flat with glass. Bake in the preheated oven for 12 to 15 minutes. Makes 6 or 7 dozen cookies.
